Odyssey Schools: Redefining Education Through a Whole-Child Approach
Odyssey Charter Schools are transforming the student experience in Brevard County by integrating academic excellence with a deep commitment to student well-being. Serving more than 2,400 students from Preschool through 12th grade, this tuition-free public charter network is grounded in a Healthy School Model that supports the development of the whole child—mind, body and spirit.
At the heart of Odyssey’s approach is the belief that academic success and personal wellness are closely connected. “We believe academic achievement and student well-being go hand-in-hand,” says Constance Ortiz, CEO of Green Apple School Management and founder of Odyssey Charter School, Odyssey Preparatory Academy, and Montessori Village Green Preschool and VPK. “Our goal is to create an environment where students are challenged intellectually and supported physically and emotionally so they can truly thrive.”
This philosophy is reflected throughout each campus, where natural health principles are woven into daily school life. Classrooms are designed to support focus and comfort, featuring natural daylight, HEPA-filtered air systems and Green Seal-certified cleaning practices. Hallways are filled with calming classical music, creating an environment that encourages both learning and emotional balance.
A cornerstone of Odyssey’s Healthy School Model is its innovative Healthy Café program. Meals are prepared from scratch using whole, nutrient-dense ingredients, including student-grown organic produce, grass-fed beef and growth-hormone-free milk and chicken. The program emphasizes foods that are largely free of refined sugars, helping students develop lifelong healthy eating habits.
“We’re working with groups across the country to become a national pilot and elevate our school lunch program,” Ortiz explains. “Our goal is to restore eating to how our ancestors ate—focused on nutrient-dense, whole foods.”
Students also have the opportunity to participate in hands-on learning through agriscience coursework and on-site organic farming, reinforcing the connection between food, health and the environment. This experiential approach complements a strong academic curriculum that includes Core Knowledge Language Arts, American History, World Civilization and Project Lead the Way STEAM programs. Highly qualified, state-certified teachers guide students in technology-rich classrooms designed to foster curiosity, critical thinking and a love of learning.
Beyond academics and nutrition, Odyssey emphasizes character development and a positive learning culture. Through resiliency education and Positive Discipline practices, students are supported in building confidence, responsibility and respectful relationships—skills that extend well beyond the classroom.
“We’re redefining what it means to educate the whole child,” Ortiz says. “By integrating physical health, emotional well-being and strong academics, we’re creating a model that supports students in every aspect of their development.”
As Odyssey Schools continue to grow, their vision extends beyond Brevard County. With a scalable model rooted in natural health and whole-child education, they are positioning themselves as a potential national example of how schools can support both learning and lifelong wellness.
