CURRIED POTATO SALAD WITH CHIA SEEDS: CURRIED POTATO SALAD WITH CHIA SEEDS

*12 Organic potatoes (steamed or boiled)
* 2 Organic onions
* 1 Organic bell pepper
* 2 Organic jalapeno peppers or your favorite peppers
*1/2 bunch of organic parsley, preferably flat leaf, i.e., Italian Parsley
*1/2 cup of Chia Gel (See Chia gel recipe)
*1/2 tsp ground mustard seed
*2 teaspoons fresh curry powder
*1/2 teaspoon cumin powder
*1/2 teaspoon cayenne pepper powder
*2 stalks of Organic Celery
*1 package of soft Organic Tofu
*1/4 cup of olive oil
*Pinch of nutmeg
Chia Gel Recipe: Take the 1/2 cup of Chia Seeds and mix with 1&1/2 cup of water. Chill for 1 hour.
Chop potatoes, onion, bell pepper and place in a large bowl. Finely chop jalapeno peppers and parsley, and add to bowl. In blender, whip oil and tofu until smooth. In a separate bowl, mix chia gel and spices together and whip by hand until smooth. Mix all ingredients together. Chill and serve for a full supply of vitamin C and Potassium!
