Odyssey Inspires a New Standard for Whole-Child Health

Odyssey Schools are transforming the student experience in Brevard County through a Healthy School Model that serves thousands of children and weaves natural health principles into every aspect of campus life. With a mission rooted in supporting each student’s physical, emotional, social, spiritual, and academic development, Odyssey is redefining what it means to educate the whole child.
“We currently serve more than 2,400 students and integrate natural health principles into every aspect of school life,” says Constance Ortiz, CEO of Green Apple School Management and founder of Odyssey Charter School and Odyssey Preparatory Academy. “We’re working with groups across the country to become a national pilot and elevate our school lunch program—restoring eating to how our ancestors ate: nutrient-dense, whole foods.”
Meals are made from scratch in the schools’ Healthy Cafés using student-grown organic produce, grass-fed beef, and growth- hormone-free milk and chicken. Classrooms are naturally lit with HEPA-filtered air, cleaned with Green Seal-certified products, and hallways are filled with calming Mozart and Baroque music. Students also participate in agriscience courses and on-site organic farming. “We’re redefining what it means to educate the whole child,” Ortiz adds.
