Raw Pumpkin Pie
CRUST
2 cups brazil nuts
2 cups walnuts
14 pitted dates
1 Tbsp coconut oil
Grind nuts in food processor. Add dates and coconut oil, blend until it becomes a ball-like pie crust. Press into pie pan.
FILLING
3 cups sweet potatoes peeled and shredded
1 cup cashews
14 pitted dates
2 Tbsp coconut oil
2 Tbsp pumpkin pie spice
Shred potatoes and grind cashews. Place all ingredients in food processor and blend until creamy. Fill crust and refrigerate.
TOPPING
1 cup cashews
1/2 cup water
2T agave
1T coconut oil
Place all ingredients in a blender and blend until creamy. Add more water if necessary.
